    Healthy Inspirations Recipe Range - fruit surprise smoothie pops


    Need some healthy family friendly recipes? Discover the new healthy inspiration recipe range which will be full of fun recipes that are packed with taste and full of healthy goodness!


    This is the first recipe of my healthy inspirations recipe range, so I wanted to start off with something deliciously sweet but good for you too.  Homemade ice pops are so easy to make and the flavours can be tailored with different fruits to suit all tastes.

      After all the luxurious food and drink I've had over the festive season I've been craving a little goodness in my life, so last night I pulled the blender out from its long winter hibernation and started blending. I've been snacking on crisps and chocolate a little too much over the holidays so I wanted a healthy substitute to snack on if I felt like a sweet treat.  These fruit smoothie ice pops are packed full of vitamins and minerals, great to grab on the go and a sweet treat for the whole family.


    Ingredients

    • 10 sliced strawberries (stalks removed)
    • 1 ripe sliced banana
    • 1/2 a cup of natural Greek yogurt
    • 3 tablespoons of skimmed milk
    • 1 sliced kiwi (for decoration)
    • 1 sliced strawberry (for decoration)

    Method

    1. Slice the fruit and pop it in the blender with the yogurt and milk and mix on high speed for a few minutes.


    2. Pour into ice-lolly moulds and fill almost to the top.


    3. Carefully push in the sliced strawberry into half of the moulds and the kiwi into the other half.


    4. Place the lids on, place into the freezer and leave over night.




    (why not substitute the natural Greek yogurt for low fat Greek yogurt if you're dieting)


    That's it! A great healthy snack which is great for the whole family x

    The Easiest 10 minute Chilli and Garlic Pasta recipe


    In need of a super quick family friendly recipe? Introducing our amazingly flavoursome pasta recipe straight from the kitchens of Southern Italy!


      I must admit, I'm a girl who loves a quick and easy recipe. Especially for one of those hectically exhausting days when the thought of cooking makes you want to cry! It's then when I thank my lucky stars for this little recipe which I am about to share with you, it's beautifully simple yet still a family pleaser.
     This recipe has been my Italian mother-in-laws go-to recipe when she needs to feed a large hungry family quickly. It's one I've had my eye on for a while and thankfully, when she came over during the festive holidays she showed me how she made it (and also left me her little jar of amazingly scrumptious grated Pecorino bought from a little cheese market in Italy).

    For this simple Italian family recipe you'll need:

    * Spaghetti (enough to serve a family of four)
    * 1/4 cup of Olive oil
    * 3 cloves of sliced Garlic
    * 2tbsp of fresh herbs like Oregano or Thyme (I sometimes use dried Italian seasoning for quickness but if you do just use a teaspoon)
    * 1/8 a tsp of Chilli Flakes (adults may want an extra sprinkle after serving depending on taste)
    * 1/2 a Cup of Grated Pecorino Cheese (Parmesan would be a fine alternative)

    Method

    * Bring to the boil a large pot of slightly salted water then add the spaghetti (cook until al-dente)

    * Finely slice the garlic and add it along with the herbs and chilli to half of the oil. Heat until the garlic releases wonderful aromas and turns slightly golden (which isn't long, so keep your eyes on it). Then add the rest of the oil and quickly warm through.

    *Simply drain the pasta, add the sauce then toss with the Pecorino and a little Black pepper (additional Pecorino to be sprinkled on top after plating of course)



    That's it! Very simple, very easy and deliciously wholesome x

    Money can't buy happiness... but it can buy a decent bottle of wine and a really large box of chocolates!




    January 2015

    Hangover status = severe (can only assume that wine is no longer my friend)

    Pounds gained during the holidays = 4 (ass and face)

    Pleasure gained from gobbling up leftover Christmas chocolates = infinite


    January has to be my least favourite month of the entire year! Not only am I carrying an extra four pounds of holiday weight but I am also carrying around this horrible feeling of impending doom (which is only heightened by all the toned tanned bodies on those exercise and summer holiday television adverts).
      
      It is universally acknowledged that January is the month to start a diet, but I seem to be missing the part of the brain that influences self-control and commitment.  This is probably why I feel morally obliged to consume every drop of left over alcohol and gobble up every loose chocolate in the house - purely so they won't go to waste. It's also why, in the grocery store,  I seem totally seduced by the little tubs of half priced luxury Christmas pâté instead of stock piling celery sticks and sugar snap peas.

      Every year, on the second of January precisely, I sit myself down and take a long hard look at my life. It's then when I realise that I have completely no idea, who I am or what I do, I also have no real life plan or strategy or indeed a large pile of savings happily nestled in a bank somewhere. 
       Equally important, I am also fully aware that I am now firmly in my thirties and conscious that my biological clock is ticking (not a quiet subtle ticking but loud humongous ticks like the noisy old clock in my grandparents house). And yes I know - ten years have been spent in the same relationship and no... still no wedding! This also means that when I do eventually get around to getting married I am sure to look a wrinkly old mess, which no amount of photo shop artistry tricks can blot away.
      Quite frankly, it all getting on top of me! One can only assume I will be found at the end of January, face down, attempting to drown myself in a sea of half price Christmas pâté!

    Incredibly Christmassy Candy Cane Hot Chocolate




    I truly believe that somewhere in the wintry North Pole, Santa claus is sitting by the fire enjoying a delicious mug of Candy Cane hot chocolate. I don't think anyone would argue that hot chocolate has to be one of the cosiest drinks of the festive season and it's perfect for sipping away the cold.  Apart from looking fabulous this Candy Cane hot chocolate recipe is wonderfully sweet and pepperminty yet still unbelievably creamy!

    Candy Cane Hot Chocolate

    I begin with a small saucepan and warm two cups of milk. Melt in 100g of milk chocolate (you can add dark or white instead, if you'd like), add 1 tsp of vanilla extract and a pinch of salt and whisk together until lovely creamy and warm. Then ladle into some Christmas mugs and garnish with lashings of cream,  a sprinkle of crushed candy cane on top and a single candy cane, which adds the minty flavour but also makes it look festively fabulous!

    (P.s why not whip up some warm pine-nut cookies for a lovely Christmassy snack )

    Incredibly Christmassy Sticky Toffee Nut Hot Chocolate 



    Ah Hot Chocolate - what a wonderful creation! For me a good hot chocolate is like falling in love! You dream about it all day, it's great to snuggle with on the sofa and you simply can't wait to wrap your hands around it!  

      I have been waiting for such a long time to share some delicious Christmas Hot Chocolate recipes and Christmas time seemed ideal - it's when Hot Chocolate truly comes alive! 
      This recipe is definitely of my favourites, it's wonderfully warm, woodsy and overflowing with a rich creamy goodness! The best thing is, it fills your home with a wonderfully nostalgic smell of Christmas, which is altogether indescribable!

    Sticky toffee Nut Hot Chocolate

    I begin with a small saucepan and warm two cups of milk. Then add 2-heaped tbsp of Nugatti (or Nutella) with a pinch of salt and the same of Cinnamon (a little goes a long way) and whisk together until lovely creamy and warm. Ladle into some Christmas mugs and garnish with lashings of cream, drizzles of toffee sauce and a sprinkle of freshly ground walnuts.

    (P.s why not whip up a delicious cinnamon apple crumble for a lovely wintery evening supper)

    The easiest - irresistible chocolate and walnut brownie recipe 

     I love my life - I'm just sitting down with a warm gingerbread latte and a devilishly tasty chocolate and walnut brownie - oh yes!
     I just can't resist cutting into the deliciously gooey goodness of these decadent dark chocolate treats.


      As many of you know I adore recipes that are incredibly easy to make and don't need an investment in any fancy baking equipment. So - as part of my 'easiest' recipes posts I wanted to share my super easy yummy chocolate and walnut brownie recipe.

    The Ingredients

    1/2 cup butter
    1 cup caster sugar
    1/3 cup unsweetened cocoa powder
    1 teaspoon vanilla extract
    2 eggs
    1/2 plain flour
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup walnut halves
    A generous sprinkle of chocolate chips



    The Method

    Preheat the oven to 350 F (175C) and grease a baking tin.

      Simply melt the butter in a pan and pour into a mixing bowl. Add the sugar, cocoa powder and vanilla extract. Slightly whip the eggs in a cup then pop them in the bowl, adding the flour, baking powder, salt, walnuts and chocolate chips. Gently stir all the ingredients together with a wooden spoon and spread the batter into your baking tin.

    Now simply bake for 25-30 minutes in the oven, remove and when it's cooled just cut into squares.




    Hints and Variations

    You could try adding:

    Fudge pieces
    Pecans
    Cherries
    Salted caramel pieces
    White chocolate chips

    What's cooking mummy?....The easiest yummy baked Ziti


    Welcome to my crazy kitchen!

      As many of you may know I love Italian food so this week I wanted to share my truly scrumptious baked Ziti recipe.

          Every-time we visit my Italian Mother-in-laws house for lunch and open the front door out floods an array of beautiful aromas, like a big Italian hug it scoops you up and leads you to the kitchen.

     It’s there you’ll find Nonna, who at 83, as well as being an amazing cook, can usually easily over-take me on the stairs. It's here traditional Italian recipes are passed through generations from mother to daughter and is the heart of the every Italian home.

      Making sure every belly is full and happy is her role within the family, this is where she truly belongs, where food comes alive in her hands. She’s the Rembrandt of cooking and and her wooden spoon is her paintbrush.

     The Italian dinner table may be just as important. An Italian dinner table is where familial bonds are strengthened; where celebrations begin and where old friends are welcomed into the warmth of the family.

      The whole family usually attend the meal, a crescendo of happy voices waiting eagerly until the food comes out. When it does appear it's a feast for the eyes and the belly and includes Nonna’s famous lasagna where second helpings are always required). Nonna is the usually the last one to sit down at the dinner table and the first to get up, she wouldn’t have it any other way.

     I knew when we moved to Norway I wanted to carry on some of those beautiful Italian traditions and recipes with my daughter Siena Rose, so in honour of that I am going to share one of my favourites my baked Ziti. 

     Ziti is a beautifully delicious pasta dish, great to share with family and friends and is guaranteed to fill the house with wonderfully alluring aromas.

    Baked Ziti Recipe 
    Ready in - 55 m


      Bring a large pot of slightly salted water to the boil. Add the Ziti pasta and boil, uncovered, until the pasta is al dente (edible but still a little firm, approximately 8 minutes). Drain and toss with a little olive oil, so the pasta doesn't stick together while you make the sauce.



                        



                  Put two table spoons of oil in a pan, dice the onion and mince the garlic and saute on a medium heat until softened.

                         

    Now add your ground meat and mash it all together in the pan.
    Brown the meat and drain most of the fat (leaving a little in for flavour)




    Add spaghetti sauce with some salt and pepper to taste and simmer for about 15 minutes.





    Meanwhile get a large plastic bowl crack an egg into the Ricotta, to make it creamy, gently stir then toss with the cooled Ziti pasta.

    Preheat the oven to 350 degrees F (175 degrees C)

    Put a thin layer of sauce in a baking dish. Then layer in some Ziti mix, add some of the sauce, a handful of mozzarella and sprinkle of Parmesan on top and add some dried oregano/basil. Repeat the layers and pat down firmly. Finish the final layer with lashings of sauce, slice on the fresh Mozzarella and add some Parmesan and finish with oregano/basil.



    Bake for approx 30 minutes or until the cheese melts then leave to stand for 5 minutes




    Then simply enjoy with friends and family and enjoy all the compliments about your fabulous cooking skills!




    Ingredients

    • 2 jars Spaghetti Sauce or Marinara Sauce
    • 1 whole egg
    • 1 tub Ricotta Cheese
    • 1 1/2 cups Mozzarella Cheese, shredded
    • 1/2 cup Parmesan cheese, grated 
    • 2 teaspoons dried oregano or basil/Italian seasoning
    • 1 Fresh Mozzarella (preference)

    Hints and Variations
    You could add any of these variations to the dish if you make it quite often
    • You could add a little Italian Sausage to the ground beef (for a stronger flavour)
    • Add a little nutmeg (for a more festive taste)
    • Add some chopped olives to the sauce (for a real Mediterranean flavour)
    • Add red pepper flakes (for a little kick)
    • Add spinach ribbons (good for kids)
    • Use fresh herbs like chopped parsley on the final layer (for a fresher look)
    • I add some vine tomatoes (for a fresher flavour)
    • Add rosemary (for a nice winter flavour)

    The easiest warm apple crumble - a Taste of home


    The Humble Crumble

                                 Hello fellow bakers! (or people like me...who want to masquerade as bakers)

     With the winter nights closing in here, there is nothing better than the joy of sitting down to a warm comfort pudding, it's always the perfect ending to any meal.

      Having a toddler in the house, I absolutely adore recipes that are simple, quick and cheap to make. So I have made 'The easiest' recipe posts for baking novices or for those with busy lifestyles so they too can enjoy the pleasure that comes with eating home-baking.


                 
            
     An all-time favourite in our house is an old-fashioned classic, the apple crumble. The warm apples and crunchy golden crumb topping is a great way to satisfy those of us with a sweet tooth. Yes it's indulgent but it's winter so...diet shmiet!

        This is my take on the ultimate classic comfort pudding (I've used cups to make it very simple); 


    You'll need:

    4 large apples

    1/2 cup Granulated sugar

    1 1/4 cups of plain flour

    5 generous Tbsp or 1/3 of a cup butter


    It will take about 15 minutes to prepare and 30 minutes to cook 


    Method

    * Peel then core the apples and slice them each into six pieces ( I used a core and slice gadget from Ikea it saves lots of time. Otherwise cut them into quarters first then peel, slice out the core, then cut them slightly thinner)

    * Place them in a baking dish then sprinkle half the sugar evenly on to the apples

                                                  

    * Place the butter, flour and remaining sugar in a mixing bowl and mix well, using your hands, until it resembles breadcrumbs. Then sprinkle this generously over the apples spreading it right up to the edges and pat down.

    * If you want to cook it later simple cover it with clingfilm (saran wrap) and store in the fridge. Otherwise preheat the oven to 180C/350F and bake for 30 minutes to reveal it's golden crumb and bubbly goodness.

    Enjoyed best warm from the oven.  You could eat it on it's own but it's much nicer with custard, a dollop of ice-cream or a drizzle of caramel sauce.



    Hints and Tips

     I sometimes like to add a sprinkle of cinnamon to the apples and the crumb for added festive cheer or finely chopped almonds in the topping for a little added crunch.

    The easiest yummy scrummy cookie recipie - ideal for the Christmas season

    Hello fellow bakers! (or people like me...who want to masquerade as bakers)

    With Christmas cookie season almost upon us and visiting relatives to impress I wanted to give you the simplest, easiest cookie recipe that even baking novices will love.

      At Christmas I love making Pignoli cookies, as my daughter is part Italian and I love carrying on an Italian tradition that hopefully one day she will pass onto her children.


      There is nothing better than the warm Christmassy smell of fresh pine nuts cooking in the oven which makes this recipe an instant Christmas favourite with family and guests.  I've also heard, from a very good source, that they are Santa's favourite cookie. They are equally good popping in a gift box for a cost effective end of term teacher gift.

      There are other fantastic recipes out there but they require more cost in ingredients or more time and effort both of which is in short supply in my house at Christmas time. This cookie recipe will make a generous batch of warm cookies and leave plenty left over for later.

    Here it is the easiest Cookie Recipe in the world!
    (I've even used cups as I have never owned a set of scales)

    The ingredients you'll require are;















    * 1/2 cup Unsalted butter
    * 1/2 cup sugar
    * 1/2 tsp vanilla extract
    * 1/4 tsp salt
    * 1 egg
    * 1 1/4 cup white flour
    * small bag of pine nuts 
                                                                   and that's all you need!

    * Manually blend the butter, vanilla extract, salt and sugar in a medium or large bowl
    * Add the egg and beat it (Picture you're bingo wings just dropping off)
    * Stir in the flour and then mix it using a spoon at first then your hands, it may take a while to come together but trust me it will eventually look like cookie dough.
    * Take a piece of wax paper or saran (cling-film in the UK) as a surface to roll on and roll your dough into a log. Wrap the finished log in a piece of saran.
    * Put the log in the fridge - and make sure you have the ends sealed so it doesn't dry out.
    * Leave that dough in the fridge at least 2 hours. 
                                                                           You now have two hours...enjoy!

    * Preheat oven to 350°F (the equivalent setting in Europe would be 180°C.  If the oven is fan assisted drop that to 170°C or you will have burnt cookies)
    * Unwrap the log and cut into slices - No thicker than 1/4 of an inch (if you're using a cutter, roll it out with a rolling pin and a dusting of flour and then it can be cut into any shape stars, hearts or snowmen). This recipe should make around two dozen cookies which will fill quite a few hungry tummies.

    *  Now scatter a generous handful of pine nuts on the cookies or put professional little designs on top.
    * Add a dusting of flour under the cookies to stop them from sticking. If you don't want them to spread out while cooking fork them a few times. Then simply bake for around 15 minutes until they are a lovely golden colour on the outside
    15 minutes is just the right time to enjoy a well deserved cup of coffee...it's as if this recipe was sent from the angels above!

                     Wow! beautifully warm cookies and a free cookie fragrance for your house.

       If your not too keen on this flavour you simply use the original recipe and add your desired combinations. Have fun with it!

    These are a few other Christmas flavour combinations you can try that I just love;

    Walnut and milk chocolate
    Cranberry and orange
    White chocolate and macadamia
    Yummy ginger
                                                   

    The great news is these are a great cookie to use all year for an after school treat or to take as a gift to someones house and I just love coming up with little flavour combinations that give people the impression I'm a culinary genius;

                                                      

    Great children cookie combinations

    Peanut butter
    Orange milk chocolate drop
    Honeycomb half dipped milk chocolate
    Fun coloured Smarties
    Diam bar crunch
    Toffee fudge
    Oatmeal Raisin

    and for the adults

    Orange and dark chocolate
    Dark chocolate chips and chili
    Chocolate Pecan
    Hint of lemon
    Coconut and milk chocolate


            and great news is all of these can be bought in the bakery Isle of your local supermarket.
